   Patrick grew up Piedmontese-Italian, studied medicine in Bordeaux, and absorbed wine culture organically. He still practices as a pathologist while running the winery. 55,000 bottles per year from 8 hectares.

   Guides Tania and Mariam are described as extraordinarily knowledgeable and warm. Ask about Patrick's story: born of Italian descent, trained in Bordeaux, moved to Portugal with his wife Fatima at 33, found the land in 2001, planted vines in 2002, first 5,000 bottles in 2006. The winery was complete by 2008. This is a family operation, not a corporate brand.

   Walk the Moorish Capital That Named the Algarve

   Silves Castle is 3 minutes by car. The Moors called this place Xelb, in the province of Al-Gharb, which literally means "the west." That's where the word Algarve comes from.

   Drive 3 minutes to Silves Castle (2.80 euros). Walk the ramparts. The Cisterna da Moura inside is an 11th-century water system that held enough for 1,200 people and was still in active use until the 1990s. The cathedral nearby was built on the site of a mosque.
