   The 1947 Château Cheval Blanc is considered one of the greatest wines ever made—and it was an accident. Extreme heat made sugar levels so high, fermentation nearly failed, so winemakers added ICE CUBES to the vats. Current auction price: $15,000-22,000/bottle. LVMH owns both Château Cheval Blanc AND this hotel—the cellar has verticals of the namesake wine. Ask sommelier Thibaut Henry about the restaurant's name while dining at one of just 5 tables in the futuristic white dining room.

   This isn't background cooking—it's choreography. All 5 tables face the open kitchen where Chef Yannick Alléno's brigade works under head chef Dorian Fontaine (6 years at Alléno's Paris flagship). Alléno's true passion is sauces, "the fruit of a long-term labour of love revolving around extraction and fermentation." Watch for the sauce work. Count the number of hands that touch each plate—you'll see 10-15 people in perfect synchronization.

   Thibaut Henry pairs wines "down to the smallest detail" - ask him to explain why.

   When the wine pairing is presented, ask sommelier Thibaut Henry to explain ONE pairing in depth: "Why this wine with this dish specifically?" Don't just accept the pairing—the pairings here are "thought out down to the smallest detail." Is it weight matching? Contrast? Regional affinity? Textural echo? Pick the course you're most curious about and let Thibaut show off his knowledge.

   You're dining in a resort that was sketched in a Nazi POW camp.

   Before this resort existed, architect Laurent Chappis was a POW sketching a ski resort on scraps of paper in an Austrian stalag—the world's first purpose-built one. Nicknamed "the Anarchitecte," he invented ski-in/ski-out and surveyed the Trois Vallées alone on skis in 1946. You're dining in the most expensive restaurant of the dream he drew in prison. He died in 2013. Silently acknowledge this history beneath your feet.
