   Bollinger ferments reserve wines in 4,000+ oak barrels stored under cork (not crown caps) in cellars beneath the main house. This costs fortune and effort but creates unmistakable richness — only 4% of houses do this. When you enter the barrel room, ask: "How long do reserve wines age in barrel?" (Answer: years, not months). Ask to see a barrel being topped up as they lose wine to evaporation ("angel's share"). Touch the oak if allowed.

   In the 1860s, phylloxera destroyed every vine in Europe. Except a few. Bollinger has 0.15 hectares of UNGRAFTED vines — pre-phylloxera, 150+ years old — in their Vieilles Vignes Françaises vineyard plots. They make one of the rarest champagnes on Earth: ~3,000 bottles/year at €500+/bottle. Book "Prestige" tour (€90+) which includes vineyard visits. Ask: "Can we see the ungrafted vines?" Stand among vines that survived when millions died.
