   Look for a small entrance leading down stone steps into a literal cave in central Chamonix - vaulted ceiling, wine racks carved into rock walls. 8 tables maximum. The locals know Bistrot des Cristalliers. Tourists walk past it 100 times. Ask your hotel concierge for directions if needed. Reserve 2 days ahead (small venue, fills up). Go at 7pm-8pm before main dinner rush.

   🔄 BACKUP: If full, they'll recommend their sister spot or a rival they respect. The natural wine community in Chamonix is small and collegial - they'll make sure you're taken care of.

   Order the Weekly-Changing Natural Wine Flight

   Order the 'natural wine flight' (€18-25) - it changes weekly based on what's drinking well. The staff will explain each wine's story - who made it, why it's special, what makes this vintage different. Pair with local charcuterie plate (€12-15). The wines are natural/biodynamic, often from Savoie producers you've never heard of. That's the point.

   🔄 BACKUP: If you don't like natural wine's funky character, they have conventional Savoie wines too. Just say 'something clean and crisp' and they'll pivot.

   Ask for the Off-Menu Winemaker Special

   Ask about the 'Mondeuse from the winemaker they visited last month' - they always have an off-menu special. These are bottles that arrived last week, no label, just 'try this.' This is Chamonix wine culture at its purest: secret, generous, uninterested in showing off. You have to ask. The off-menu wines aren't advertised. Build rapport with staff first, show genuine curiosity, then ask what they're excited about that isn't on the list.

   🔄 BACKUP: If there's no off-menu special, ask 'what would you drink after your shift?' - that's often the most interesting bottle in the house.
