   Chef Benoît Vidal left everything familiar to make his den in Le Fornet - a hamlet so tiny most Chamonix visitors never find it. Book the 8-course tasting menu (€195) and ask for the wine pairing. The sommelier will pour Alpine wines you've never heard of - Mondeuse from 800 meters, Jacquère that tastes like glacier water. When Vidal earned his first Michelin star after ONE season, inspectors called it the fastest ascent in French alpine dining. He got his second star two seasons later. You're eating at a restaurant named for his grandfather Edmond, a carpenter who built with his hands. Now his grandson builds flavors the same way.

   Before dinner, walk around the tiny hamlet of Le Fornet. The restaurant is named L'Atelier - 'The Workshop' - because grandfather Edmond was a carpenter who had his workshop right here. Ask your server which wooden elements in the dining room are original to his atelier. Some of the beams are 100+ years old. The chef didn't just name the restaurant after his grandfather - he built his kitchen in the same space where Edmond built furniture. That's not branding. That's bloodline.

   Taste What 2,000 Meters Does to Cheese

   Order the cheese course separately (€28) even if you're full. Vidal sources from farms above 2,000 meters - altitude changes everything about how milk ferments. The Beaufort d'Alpage here comes from cows that only graze 100 days per year, in meadows most humans can't reach. Ask which cheese traveled the furthest vertically to reach your plate. The answer will be measured in meters of elevation, not kilometers of road. This is mountain gastronomy - where 'local' means 'above the treeline.'
