Ask the sommelier: 'Which pairing tonight was the hardest to match?' Plant-based dishes have different weight, acidity, and umami than meat dishes, forcing creative pairing choices. The answer reveals how Finnish sommeliers think differently from their French or Italian counterparts — where the default is always 'red with meat.'
