Enter the hotel lobby and say 'Weinzeit?' - staff will point you to stairs leading DOWN into a cozy cellar that feels like a secret society. The stairs are the initiation - once you descend past the low ceilings into warm lighting surrounded by wine bottles everywhere, you're in the club of natural wine enthusiasts hidden beneath Zermatt village.

   Tell the sommelier at your seat in Weinzeit cellar that you want 'the weird stuff' - natural, biodynamic, experimental wines. They stock 80+ natural wines including biodynamic Petite Arvine from a 0.8-hectare producer, orange wines from Valais (skin-contact whites), and experiments that don't fit any category. Request a 3-glass tasting (CHF 35-50) and ask specifically for orange wine if available - it's polarizing but fascinating. Ask about Valais biodynamic producers who bury cow horns under the full moon. The sommelier lives for this conversation.

Tell them you're interested in natural Valais wines - they may save something special. Arrive around 6pm when it opens to claim the best seats near the wine racks, or try walk-ins early evening when tables may open. Weeknights are easier to get in without reservations.
