Completer is one of the world's rarest varieties — only 4 hectares planted globally, named after the monastic 'completorium' evening service when monks could finally drink in silence. If they have Completer (CHF 20-40/glass), you're drinking monastic history. Ask the sommelier to explain why it's so rare and taste it slowly — this grape may disappear in your lifetime.
