In the 11th century, Benedictine and Cistercian monks from Lutry, Hautcrêt, and Montheron monasteries carved these slopes into terraces with an insane scale: 10,000 terraces supported by 450km of stone walls—if laid end-to-end, longer than Geneva to Zürich. Take the S2/S3 train from Lausanne to Cully station (20 min, CHF 6-8), then follow the 11km hiking trail toward Saint-Saphorin (2.5 hours, easy). At any terrace wall, stop and touch it—these stones were placed by monks 900 years ago and maintained by every generation since, creating microclimates with the 'three suns' effect that makes grapes ripen evenly.
