Mavrud comes from the Greek "mavro" (μαύρο) meaning "black" — this deep bluish-black grape has 2,000+ years of history back to the Thracians and grows only around Plovdiv. This isn't Bulgarian wine adopted from Greeks; this is Thracian wine that Greeks named when they arrived, made from Mavrud before Greeks taught Dionysus worship. At Villa Yustina (book ahead) or other Thracian Valley wineries, order single-varietal Mavrud and note the dark ruby, almost black color. Smell mulberry, prune, blackberry, and taste the full-bodied wine with firm tannins that Thracians drank undiluted, shocking Greeks who added water.
